Wasn't my moose, but I did get to put a finisher into it. 
No clue on the backstraps. We left everything from the pelvis to the neck on the bone (cut ribs off at the edge of the 'strap) . That way they can cut T-bones. Have left the whole torso together before, but trying to avoid a hernia as that gets to be too much. Moose was 721lbs on the bone at the butcher's.

Yeah, the mask didn't do him any favors. Running into the likes of you two, didn't help his situation any, either. Nice moose!
