Wasn't my moose, but I did get to put a finisher into it.
No clue on the backstraps. We left everything from the pelvis to the neck on the bone (cut ribs off at the edge of the 'strap) . That way they can cut T-bones. Have left the whole torso together before, but trying to avoid a hernia as that gets to be too much. Moose was 721lbs on the bone at the butcher's.
