They are Albacore. We occasionaly catch small Bluefin, and guys also catch Yellow tail (Hamachi) on occasion from under kelp patties.
Albacore are ok for sashimi, but the Bluefin and Yellow tail are much better.
We mostly can our catch, some plain and some after a little smoke. Its also great on the grill, or fry pan if only the outer part is cooked and the center is pink. Its darn good deep fryed also for fish and chips.
