My wife likes to cut the fish into 1" cubes and roll them in ranch dressing and then in crunched up Ritz crackers. My favorite variation is to roll the chunks in garlic butter and then crunched up potato chips.
Either way, bake it at 500-degrees for 10 minutes. Quick, easy, and delicious!

I've had it with the Ritz coating. Damn good and I nearly made myself sick.

Make original recipe shore lunch beer batter and cut into 1" cubes, coat it in beer batter, toss coated cube into bag of instant potato flakes. Fry until golden brown.
Drink rest of beer and enjoy.
